Pralines, or Pecan candy, is a classic treat that embodies the sweet, nutty flavors of the South. It's a perfect treat for gifting, holiday celebrations, or when you get a "sweet tooth." In this blog post, I’ll walk you through a simple recipe to create your own pecan candy at home.
Ingredients
To make delicious pecan praline candy, you will need the following ingredients:
2 cup granulated sugar
1/2 cup packed brown sugar
1 can evaporated milk
1/2 cup butter
1 teaspoon vanilla extract
1 1/2 cups pecan halves
Instructions
Step 1: Prepare Your Workspace
Before you start cooking, ensure you have a clean, flat surface to work on. Line a baking sheet with parchment paper or a silicone baking mat. This will prevent the pralines from sticking once they cool.
Step 2: Combine Ingredients
In a medium-sized saucepan, combine the granulated sugar, brown sugar, evaporated milk, and butter. Stir the mixture constantly over medium heat for 20- 30 min--the mixture will boil and then eventually calm down to the "soft ball stage" (I don't use a candy thermometer...I just listen to the ancestors. It's only right that you have to mess up a few times to be certified)
Step 3: Add Pecans and Vanilla
After reaching the desired temperature, remove the saucepan from heat. Stir in the pecans and vanilla extract, mixing well to ensure the pecans are evenly coated with the candy mixture. Keep stiring until it starts getting harder to stir. Then quickly move to the next step....
Step 4: Form the Pralines
Using a spoon or a small ice cream scoop, drop spoonfuls of the mixture onto the prepared baking sheet. Make sure to leave some space between each praline, as they will spread slightly as they cool.
Step 6: Let Them Cool
Allow the pralines to cool completely at room temperature. They will harden as they cool, forming a delightful candy texture.
Tips for Perfect Pralines
Don’t Rush the Cooling: Allowing the pralines to cool completely is essential for the right texture.
Experiment with Flavors: Feel free to add a pinch of cinnamon or nutmeg for a unique twist.
Storage
Store your pecan praline candy in an airtight container at room temperature. They can last for up to two weeks, but I doubt they’ll last that long!
